Cabernet Sauvignon Reserve

This Cabernet Sauvignon displays the elegance and finesse of a fine Bordeaux, but with the exuberance and single varietals character of a New World wine.

This wine is absolutely 100% Cabernet Sauvignon, and it shows.  Angular and fierce, it posses a lean, forward structure for its racy flavors of cassis, boysenberry, and dark red cherry fruit to lie upon.

The grapes were treated with a “cold soak” of 3 weeks, meaning that the grapes, after crushing, were steeped to allow for the full extraction of flavors and aromas.  Then, a very low-temperature, controlled fermentation was used to preserve the freshness of the grape’s character.

A finely prepared steak is heaven with this wine, but it also finds a home with a meal of roast duck or grilled venison.  Even though it is ready to be drunk now, this wine will evolve with another 4-15 years in the bottle.
