White Cabernet
This unique rosé wine was made by the saignée method, where grape juice is “bled” off from the skins of the red grapes after only a few hours of contact.
A fully dry wine, this cabernet was fermented at cold temperatures to preserve the freshness and fruit qualities of the grape. A further 8 months of storage in stainless steel tanks on the yeast lees has added notes of complexity.
This cabernet was made from the 30 year old vines of the William Penn Vineyard, and possesses a subdued bouquet of dark red fruit, with aromas of black plum and a real tannic structure, unusual for a pink wine, that gives this wine real finesse and verve.
It is fashionable to declare pink wines to be ideal for outdoor enjoyment, at picnics and such. While one can certainly enjoy this dry wine in this way, it is indeed a serious wine that can make its statement in any surrounding.
This wine is meant to be enjoyed now, but it will keep another two years.
